Lemon & Thyme Cookies

Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 teaspoons lemon zest
1 tablespoon fresh lemon juice
2 tablespoons fresh thyme leaves, finely chopped
3 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Optional: powdered sugar for dusting
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Then, mix in the lemon zest, lemon juice, and chopped thyme leaves until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet. Leave some space between each cookie as they will spread slightly while baking.
Bake the cookies in the preheated oven for approximately 10-12 minutes, or until the edges are lightly golden. Be careful not to overbake.
Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely.
Optional: Dust the cooled cookies with powdered sugar for an extra touch of sweetness and presentation.
